The $6.3-million overhaul of Roberts, which began in June of 2005, eliminated the behind-the-scenes kitchen, putting new stainless-steel refrigerators, stoves, and ovens in plain sight. One large dining room with paneling made from sustainably harvested wood unifies what had been two separate eating areas. A gas fireplace adds to the ambiance. Arches in the dining area have been preserved, and new arched windows separate the lobby from the dining area. The pit in front of the main entrance to the building has been reduced, creating extra space for the Dining Services offices. A bakery opens off of the serving area. The serving area features four dining stations, a wide range of menu items, and stylish new china.
